I love making this, there's nothing better than the taste of home made Quiche You will need: shortcrust pastry(shop bought or make your own) For the pastry: 225 g (8 oz) Plain Flour pinch salt 50 g (2 oz) lard 50 g (2 oz) margarine cold water to mix, about 30 ml (approx. 2 tbsp.) For the filling: 100 g (4 oz) bacon, chopped 75 g (3 oz) cheese, grated 2 medium eggs 150 ml (¼ pint) milk salt and pepper Pastry(If using shop bought go straight to number 4) 1 Mix flour and salt in basin, rub in fat. 2 Using a knife to cut and stir, mix with cold water to form a stiff dough. 3 Turn dough on to a floured surface and knead lightly. 4 Roll out and use as required. 5 Heat oven to 190ºC, 375ºF, Gas Mark 5. Line an 18 cm (7 inch) flan dish or sandwich tin with pastry. 6 Fry the bacon lightly, then cool. 7 Place half the cheese in the pastry case and cover with bacon. 8 Beat the eggs and milk together, season and pour over the cheese and bacon. Sprinkle on remaining cheese. 9 Bake for about 40 minutes until set and golden brown. *tip* I love bacon so I use a lot more than the recipe asks for and I also chop up one onion and fry it with the bacon before adding it to the quiche.
