I buy a container of red Thai curry paste from the Deli part of Sainsbury's called Mae Ploy it costs about £2.89 but lasts for ages in a cool dark place. Its actually made in Thailand and is very authentic, failing that you could try your local Chinese Supermarket.
Serves 5
Ingredients:
5 Chicken Breasts, diced. (there are 5 in our family but you could use less and have more sauce)
1 tin(400g) of Coconut milk
1 tbsp vegetable oil
1-3 tbsp of Red Curry Paste(depending on how spicy you would like it)
2 tbsp of palm sugar or demerrera sugar(Sainsburys have palm sugar in the same place as the curry paste)
4 tbsp of fish sauce(sounds awful and smells awful but it is absolutely essential, don't worry, you can't taste it!)
5-6 Kaffir Lime leaves.
First heat the oil in a large saucepan then add the curry paste stirring it, being careful not to burn it for about a minute or until it becomes fragrant. Take the pan off the heat and slowly add the coconut milk a little bit at a time until blended with the paste. Bring it to the boil then add the chicken, when the chicken begins to turn white, add the sugar, fish sauce and lime leaves. Cover & simmer until the chicken is cooked!
Serve with boiled rice.
Its as simple as that! Don't worry if you can't get palm sugar, demerrera is just as good. All the ingredients are available from Sainsburys.
This recipe is a winner every time, even the kids love it but if its your first time trying it I would suggest you use a scant tablesthingy of curry paste as it can be a bit potent.
I serve it with boiled rice but I also love it in a bowl so I can soak up the juices with crusty bread
