This is another favourite of mine
You will need
500g of Macaroni
4-5 rashers of bacon
40 g (1½ oz) butter
40 g (1½ oz) Plain Flour
600 ml (1 pint) milk
100-175 g (4-6 oz) grated cheese
1 x 2.5 ml (½ tsp) english mustard
Plenty of black pepper.
Grated Cheese to sprinkle on top.
Cook the macaroni in boiling water.
Whilst the pasta is cooking, fry the bacon in a little oil until cooked then drain it on kitchen paper.
Now melt the butter in a saucepan over moderate heat, add the flour and beat until smooth, remove from heat.
Add the milk, a little at a time, and beat well. Bring to the boil and cook gently for 2-3 minutes, stirring all the time. Add the mustard and slowly add in the cheese stirring all the time.
Drain the pasta and combine the pasta, cheese sauce, black pepper and bacon together in an ovenproof dish. Sprinkle over the grated cheese and cook in the oven for about 10mins @ 200C until the cheese is bubbling. A great dsh all the family will enjoy!
*tip* Try adding mushrooms (cooking them with the bacon) as well and after sprinkling with cheese, add some sliced tomatoes on top!
The beauty of this is that it doesn't matter what size dish you use, just fill it up with the mixture and sprinkle the cheese on top, if you have any left over, use another dish and make another one for the next day!
If you do have plenty left over and want to eat it the next day, follow the steps up until you put it in the oven. Cover it with foil and put it in the fridge. When you come to want to eat it, add some milk before you put it in the oven as the pasta soaks up all the sauce and it becomes congealed, cover with the foil and heat for about 20 mins, take the foil off and allow the cheese to bubble on top!
